Mushroom Cheese Omelette

Hey guys,
So this is my 1st ever blog so am nervous about my writing since its not my strongest point :) please overlook if you find any mistakes!

This is a classic and filling dish I love so much that I can have anytime. Packed with mushrooms and cooked to perfection, with creamy cheese melting over it. Ahh the joys of small things like this!!(ofcourse comes with a price. All that work out to shed those extra calories!)
Since there are no set ingredients for this dish you can let your imagination go wild and choose what you want to add to the flavour, here is my favourite one.

Gooey Cheesy omelette when i made it in my hostel!


Need: (serves 2)
4 eggs
Mushrooms(button) as many as you love
1 small garlic clove crushed
1/2 chopped tomato
1 large chopped onion
2 Green chillies
Parsley
Cheese (slice or spread)  2
Salt
Olive oil or butter

Method:
Add oil/butter to a pan and once it heats up add sliced mushrooms and garlic and cook while stirring with a spoon for 3 mins or until mushrooms are soft and beginning to brown. Remove from pan and set aside.
Lightly whisk eggs adding a few drops of milk or water (secret to fluffy omelettes!) and salt to taste.
Add all the ingredients except  cheese and parsley, and whisk a little more.
Add this mixture to a hot non-stick pan coated in oil and cook for a few seconds, sprinkle parsley and cook over medium heat for 2 mins.(mushrooms can be sprinkled after the egg mixture is added to pan and cooked)
Shake the pan to ensure that omelette is not stuck to the pan. Flip the omelette to cook if necessary. place cheese slices on one side, fold and keep in hot pan for a few seconds allowing the cheese to melt. Serve hot with  buttered toast.
All those calorie conscious can skip the cheese and substitute olive oil for butter.!:)
